What it is, and where it comes from
San Torpè is the name given to Vin Santo from the Pisa area, and this is the bottle the farm produces it in. It's the wine saved for the end of a meal: you don't open it by chance; you open it because you've decided there's an occasion for it.
In a winery that claims to work by subtraction, Vin Santo is the exception that demands time rather than intervention: the drying of the grapes and the waiting do almost all the work. The grapes come from the hills between Crespina Lorenzana and Fauglia.

Color
Golden yellow, it resembles the color of wildflower honey
Aroma
Warm notes of dried flowers, candied fruit, and dried fruit.
Palate
Seductive and warm, while maintaining vibrancy, roundness and complexity on the palate. Slightly sweet.
What the makers drink it with
It can also be served chilled at 5°C as an aperitif. Traditionally, it accompanies cakes, dry pastries, and social gatherings.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
