What it is, and where it comes from
San Colombano is the winery’s sweet sparkling wine: the bottle that stays at the end of the meal, alongside dry pastries and cantucci, when Vin Santo seems too much.
Here, too, the farm method applies — hand harvesting, grape selection in the field, minimal intervention in the cellar — to grapes from the hills between Crespina Lorenzana and Fauglia.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
