What it is, and where it comes from
Terre di Pisa is the name of the hills this winery stands upon, and “Raggiungerti adesso” is the bottle with which the farm labels it. Beneath the vineyards lies a fossil coral reef over a million years old: the soils are tufaceous and siliceous, with some clayey areas, between eighty and two hundred meters above sea level. The difference between two rows of vines two hundred meters apart, here, is determined by what existed before Tuscany.
In the cellar, the method is primarily about subtraction: manual harvesting, grape selection in the field, minimal intervention. The two levers they control are fermentation temperature and skin contact time; the rest is left to happen naturally. Each year, the label features a different animal figure: it depicts the local fauna and, at the same time, commemorates the vintage.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
