What it is, and where it comes from
It’s the house rosé, and it has a memorable name.
One can immediately see the effect of the duration of skin contact on this rosé — which this winery states is one of the two levers they control — the color reveals how long it lasted. Manual harvest, grape selection in the field, minimal intervention.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
