What it is, and where it comes from

Nero in Bianco is Sangiovese vinified as a white wine: the most Tuscan red grape there is, taken to the other side. It is one of the two labels that best illustrate this winery's philosophy — the other is Ginepraia Botte n.7.

Here, the lever typically used for reds, skin contact time, is almost entirely removed: the color indicates the decisions made in the cellar. Manual harvest, grape selection in the vineyard, minimal intervention.

The farm

Who makes it, and where

Fattoria Uccelliera, in Crespina Lorenzana.

Made on the Pisan hills.

Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.

“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
