In short

Spaghetti is the pasta shape that needs no explanation, and that's precisely why it's the hardest to get right: there are no ridges to hide behind, nor a shape to distract. There's just the pasta.

Here, the surface is rough because it's extruded through bronze dies, and opaque because it has never been heated: slow drying at low temperatures leaves the wheat as it was. Under sauce, you feel the difference with your fingers before your tongue.

Smooth surface
