In short

Sedani are halfway between penne and rigatoni: curved, ridged, and short. Their curvature means they never lie flat on the plate, which is exactly what a timballo needs.

They are the quintessential baked pasta shape, able to withstand double cooking without falling apart—thanks to slow drying.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
