Bronze-drawn and slowly dried by Pasta Bertoli, in Santa Luce.

In short

Half yellow and half green in the same package: egg pasta and spinach pasta, cooked together and served together. It's a dish that's seen before it's tasted, and that's why it has always existed.

The green doesn't come from a dye: it's dried spinach kneaded with semolina. It changes the color and barely changes the flavor — just enough so that in the mouth you feel they are two pastas and not one.

In the kitchen

How long it takes, and what goes on top.

Do not stir the pasta while cooking until the end.

Goes well with The ham and cream, the peas, the white sauces that reveal the two colors.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
