In short

"Straccetti" are torn sheets of pasta: irregular because that's how they should be, with no two pieces alike. It's the kind of pasta that looks homemade because originally, it truly was.

Sixteen minutes of cooking, and this irregularity becomes an advantage: each piece holds the sauce differently.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
