In short

The ridges on rigatoni exist for one reason only: to provide grip. They are why this pasta shape has become a favorite for thick sauces, those that want to stay put.

With a bronze die, the grip is doubled, because the porosity of the surface is added to the ridging.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
