Bronze-drawn and slowly dried by Pasta Bertoli, in Santa Luce.

In short

A 500g pack of organic spaghetti and an 80g sachet of garlic, oil, and chili pepper mix. It's the smallest box in the group, and also the most straightforward: one dish, well-made, in ten minutes.

The spaghetti is made from organic durum wheat semolina, grown and milled on the farm, and bronze-drawn. The mix contains garlic, chili pepper, salt, parsley, and chervil — nothing else. The company warns that it's quite spicy.

Rehydrate the mix in oil over very low heat, then toss the spaghetti in a pan with a ladleful of cooking water: it's the starch that creates the creamy sauce, not cheese.

In the kitchen

How long it takes, and what goes on top.

Goes well with A good extra virgin olive oil, drizzled raw, and, if you like, some fresh parsley at the end.

The pasta workshop

What is inside, and how it is made.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
