Casarecce is a ribbon folded in on itself, with a slit running its entire length: that slit is a channel, and the sauce flows through it.
Eight minutes in water and don't stir until the end: the rule applies to it just as it does to pici.

The sauce slides off and gathers at the bottom of the plate.
The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
