In short

The same egg pasta sheet cut into three widths, half a kilo for each: pappardelle, tagliatelle and tagliolini. One and a half kilos in total.

The dough is durum wheat semolina and twenty percent pasteurized eggs — four and a half eggs for every kilo of semolina, as stated on the product sheet — and this is what gives it its color and porosity. The three widths are not a whim: pappardelle can hold meat sauces, tagliatelle are in the middle, and tagliolini need dressings that don't overpower them.

Do not stir the pasta while cooking, except at the end.

Goes well with Pappardelle with meat and game sauces; tagliatelle with ragu or butter and sage; tagliolini with truffles, porcini mushrooms, or delicate fish.

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.

A family farm in Santa Luce: it sows its own organic wheat, mills it and extrudes it through bronze dies without it ever leaving the gate. A closed supply chain, slow drying up to thirty hours, two ingredients only.
