In short

The pacchero is large, wide, and when cooked, it collapses on itself like a pillow: the sauce gets inside and stays there. It's a shape that can also be filled, if you're willing to put in the effort.

Born in the South, here it's made with organic Tuscan wheat grown by the same family that then grinds it.

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
