In short

Pennone pasta is a larger version of penne: longer, wider, with more ridged surface area for sauce to cling to. It's the shape that can stand up to rich sauces without getting lost.

The external ridges, combined with the rough texture from bronze die extrusion, create more surfaces for the sauce to adhere to.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
