What it is, and where it comes from
Soluva is the farm's everyday red wine: one that you open without waiting for the right occasion, and that is never missing from a family cellar. IGT Toscana, from the same hills as the others.
Here too, harvesting is manual, and grape selection is done in the field. In the cellar, intervention is kept to a minimum: fermentation temperature and skin contact time, and nothing else.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
