What it is, and where it comes from
Castellaccio is at the top of the red wine list. It is an IGT Toscana, which is the denomination where this winery takes the most liberties: outside the strict regulations, within its own choices.
The usual method applies—manual harvesting, grape selection done in the field, minimal intervention in the cellar, with fermentation temperature and skin contact time as the only levers. Beneath the vines lies fossil coral reef over a million years old, explaining the tufa and siliceous soils of these hills.

Color
Intense ruby red with purplish-red hues
Aroma
Broad, very complex, ethereal. Fruity with notes of red fruit, pepper and ink, combined with woody sensations and spicy notes of cinnamon and vanilla.
Palate
Great tannic structure, very smooth, fleshy and embracing, fat and voluminous, elegant. Long, spicy and persistent aftertaste.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
