What it is, and where it comes from
The whites are the part of the production where this winery takes the most liberties, and Lupinaio is one of them: an IGT Toscana, from the hills between Crespina Lorenzana and Fauglia, on tuffaceous and silty soils between eighty and two hundred meters above sea level.
As with all the others, the harvest is manual, and grape selection is done in the field. In the cellar, intervention is kept to a minimum: fermentation temperature is maintained, and the rest is allowed to happen naturally. On the label, an animal recalls the vintage.

White, with slight green undertones
Aroma
Complex and varied: alpine fragrances, elderflower, tomato leaf, and ripe yellow fruit.
Palate
Soft and savory entry, aftertaste of tomato leaf, persistent finish.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
