What it is, and where it comes from
It's the house sparkling wine, in the dry version. On a farm that makes still wine, olive oil, and food for the pantry the rest of the year, the sparkling wine is the bottle kept cool for when guests arrive.
The company's winemaking philosophy applies: manual harvest, grape selection in the vineyard, minimal intervention in the cellar. The grapes come from the hills between Crespina Lorenzana and Fauglia, on tufaceous and siliceous soils between eighty and two hundred meters above sea level.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
