What it is, and where it comes from
Chianti is the most well-known appellation in Tuscany, and "Superiore" is the designation that requires lower yields in the vineyard and a longer aging period before release. Here, the wine is made from grapes grown on the estate's tufa and silicon-rich soils, at an altitude of between eighty and two hundred meters.
Harvesting is manual, and selection takes place in the field before the grapes enter the cellar: what doesn't pass there cannot be salvaged later. Inside, interventions are kept to a declared minimum, and fermentation temperature and skin contact time are controlled.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
