What it is, and where it comes from

Riserva is the designation that dictates the time: a longer aging period before the bottle leaves the cellar. It is the house's aging, and it is the same grapes from the estate left to wait.

The method does not change — hand harvest, field selection, minimal cellar interventions — what changes is how long one waits. On the Pisan hills, the soils are tufa and siliceous, with some clayey areas, between eighty and two hundred meters above sea level.

The farm

Who makes it, and where

Fattoria Uccelliera, in Crespina Lorenzana.

Made on the Pisan hills.

Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.

“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
