Bronze-drawn and slowly dried by Pasta Bertoli, in Santa Luce.

In short

Five colorful 250-gram formats, totaling 1.25 kg: Italy Flag farfalle, six-flavor bow ties, six-flavor fiocchetti, six-flavor caramelle, and six-flavor fischietti.

The colors are not decided by us or added afterward: they are listed in the ingredients. Black carrot, beetroot, spinach, paprika, and turmeric in the four six-flavor formats; beetroot and spinach only in the farfalle, which are indeed green, white, and red and nothing else.

These are short and small shapes, the kind children recognize and adults photograph. They cook in eight to ten minutes depending on the shape.

In the kitchen

How long it takes, and what goes on top.

Goes well with Fresh tomato, light pesto, dressings that don't cover the color. Also cold, in a salad.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
