Bronze-drawn and slowly dried by Pasta Bertoli, in Santa Luce.

In short

Two kilos of organic durum wheat pasta in four shapes, each half a kilo: spaghetti, fusilli, pennette, and maccheroni. These four shapes cover almost everything one cooks in a week — long, spiral, short ridged, and short smooth.

The durum wheat is grown and milled on the certified organic farm in Santa Luce. Bronze-drawn, slow-dried at low temperature, no preservatives, and no additives: just water and durum wheat.

This is more of a box to keep in your pantry than one to give as a gift.

In the kitchen

How long it takes, and what goes on top.

Goes well with Four shapes, four schools of thought: tomato sauce on spaghetti, vegetables on fusilli, creamy sauces on penne, baked dishes on macaroni.

The pasta workshop

What is inside, and how it is made.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.

Pasta Bertoli

A family farm in Santa Luce: it sows its own organic wheat, mills it and extrudes it through bronze dies without it ever leaving the gate. A closed supply chain, slow drying up to thirty hours, two ingredients only.
