How it is made
Three-quarters of a liter: the large table bottle, for those who don't save good oil just for special occasions. The olives are hand-picked from the tree between November and December and immediately taken to the oil mill for cold pressing.
The estate's olive grove covers six hectares and includes centuries-old trees. It is part of the twenty-one cultivated hectares out of two hundred and forty: all the rest is woodland, poplar groves, and arable land, and it is this part that keeps the cultivated area in balance.
