How it is made
The olives are browsed: they are picked by hand from the tree, one by one, between November and December. Then they go immediately to the oil mill, for cold pressing. As little time as possible passes between the two, and that's where almost everything is decided.
The olive grove is six hectares and includes centenary trees. It's the same grammar as the winery, applied to olive oil: you subtract, you don't add. This is the half-liter bottle, the table format.
