This honey

Where it comes from

Five hundred grams of wildflower honey: an everyday honey, the kind that sits open on the breakfast table and disappears before you even notice.

It's also the only one of the three that can't be guaranteed to be the same every time: it depends on what has bloomed and when. It comes from an estate where over ninety percent of the land is forest, poplar groves, and extensively cultivated fields, designed to offer a rich and varied environment for wildlife.

The plant
Multiflower honey is honey that does not come specifically from one particular botanical variety, but from an unspecified multitude of flowers. It can therefore have different tastes and colors from year to year: something that does not happen with single-flower honeys, where these two characteristics are constant.
On tasting

What it is like

In the words of the people who make it.

Crystallisation
When it is extracted from the waxcombs it is in a liquid state; then, with the passage of time and the lowering of the temperature, it crystallizes. This is due to the high presence of glucose and completely natural chemical-physical processes, which do not alter the properties of the product. To return it to a liquid state, simply immerse the jar in warm water, at no more than 40 °C.
At the table
