Where it comes from

The wildflower honey is the only one of the three that cannot be guaranteed to be the same: it depends on what has bloomed and when, and it changes from one year to the next. It is the honey that most closely resembles the place where it was made.

Here, the place is a two-hundred-and-forty-hectare estate, of which only twenty-one are vineyards and olive groves: the rest is high forest, poplar groves, and extensive arable land, cultivated in an extensive way and primarily designed to offer a rich and varied environment for wildlife.

The plant
Multifloral honey refers to honey that does not come specifically from one particular botanical variety, but from an unspecified multitude of flowers. It can therefore have different flavors and colors from year to year, which is not the case with monofloral honeys, where these two characteristics are constant.

What it is like

In the words of the people who make it.

Crystallisation
When it is extracted from the waxcombs, it is in a liquid state; then, with the passage of time and the lowering of the temperature, it crystallizes. This is due to the high presence of glucose and entirely natural chemical-physical processes, which do not alter the product's properties. To return it to a liquid state, simply immerse the jar in warm water, at no more than 40 °C.
