Where it comes from

It is the clearest and most delicate of the three honeys in the pantry: straw-colored, almost transparent when held up to the light, sweet and clean without the aftertaste left by dark honeys. Black locust blooms between May and June, and the useful window lasts only a few days.

It is also the only one that is still liquid after months: in acacia honey, fructose prevails over glucose, and as long as that ratio holds, crystals do not form. It is found in the pantry of a farm that cultivates its arable land extensively, considering the wildlife that lives there.

The plant
The acacia is a tree used for cutting and for reforestation. Its white flowers are gathered in true clusters that emit a delightful fragrance.
