Where it comes from
It is the clearest and most delicate of the three honeys in the pantry, in a five-hundred-gram jar. Straw-yellow, almost transparent when held up to the light, sweet and clean without the depth of darker honeys.
The large jar makes perfect sense for this particular blossom: in acacia honey, fructose prevails over glucose, crystals do not form, and five hundred grams can be finished at a leisurely pace without the honey changing consistency. It should be kept in the pantry, away from light.
