In short

The fusillo is a spiral, and a spiral is a trap for sauce: what goes into the curve doesn't come out until it's on the plate. It's the shape that saves sauces that tend to remain at the bottom of the bowl.

The bronze die leaves the surface porous: to the touch, the raw pasta almost feels chalky, and that's a sign that the condiment will have something to cling to.

Smooth surface
