How it is made
The tin is the container that keeps the light out, and light is oil's worst enemy: an extra virgin olive oil in clear glass left on the windowsill ages quickly. This is the small, half-liter size.
The olives are picked by hand from the tree between November and December and go immediately to the mill for cold pressing. The olive grove covers six hectares and includes centenary trees.
