Tagliolino is the thinnest cut of egg pasta: it cooks very quickly, and requires light sauces that won't overpower it.
It's the perfect pasta for broth and butter, for those quick, special dinners.

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
