Bronze-drawn and slowly dried by Pasta Bertoli, in Santa Luce.

In short

The chili is kneaded into the pasta, not added on top: the spiciness is already there when the pasta comes out of the water, evenly distributed instead of in patches.

It's the perfect shape for those who want the heat but don't want to cook: just add oil and garlic.

In the kitchen

How long it takes, and what goes on top.

Do not stir the pasta during cooking, only at the end.

Goes well with Garlic and oil. Or nothing at all, just a drizzle of good olive oil.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
