Bronze-drawn and slowly dried by Pasta Bertoli, in Santa Luce.

In short

The aroma doesn't come from a separate sachet: it's inside the pasta itself. One percent each of champignon mushrooms and summer truffle are incorporated into the dough, and the pici emerge from the water already halfway seasoned.

Nineteen minutes of cooking, stirring only at the end — the pici rule remains unchanged.

In the kitchen

How long it takes, and what goes on top.

Do not stir the pasta while cooking, except at the end.

Goes well with A drizzle of olive oil and a grating of cheese. The pasta has already done the rest.

Smooth surface

The sauce slides off and gathers at the bottom of the plate.

Bronze-drawn

The bronze die leaves the surface rough: the sauce finds a grip and stays on the pasta instead of sliding into the plate.
