What it is, and what is in it
Four and a half degrees, straw yellow. It's a Gose - the salty style from Goslar - and it's the result of a collaboration with the Buttiga brewery in Piacenza.
The recipe includes wheat and oats alongside barley malt, and then the three elements that define the style: salt, coriander, and bergamot, with selected lactic ferments providing the acidity. Here, acidity is not a corrected defect; it is the recipe. The nose offers notes of yogurt, cereal, and a light citrus; on the palate, it is slightly salty and acidic, spicy, and the savoriness keeps the drink short.
First place at Birra dell'Anno in 2018, and three podium finishes at the Barcelona Beer Challenge between 2018 and 2021.
