Where it comes from

Grappa is what you make after the wine. It comes from the pomace in the cellar: the skins that remain after the must has been removed, and which are not discarded in a company that operates by subtraction.

"Bianca" means unaged: it comes out of the still and goes into the bottle without passing through wood, and for this reason, it is the version where the original grape is most clearly expressed. The pomace comes from the manual harvest on the hills between Crespina Lorenzana and Fauglia.

Who makes it, and where

Fattoria Uccelliera, in Crespina Lorenzana.

Made on the Pisan hills.

Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.

“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
