Bronze-drawn and slowly dried by Pasta Bertoli, in Santa Luce.

In short

The same organic extra virgin olive oil from the one-liter tin, in a format for those who use it without counting. The olives come from the hilly and stony lands of the "La Ghiraia" farm, in Pastina di Santa Luce, on the edge of a Mediterranean forest: Frantoio, Razzo, Leccino, Moraiolo, and Pendolino varieties, as stated on the label.

They are harvested at the right point of ripeness and remain in aerated crates for a few hours before milling, just long enough not to alter the fruit. Extraction is purely mechanical, cold-pressed.

Three liters is the ideal quantity for a kitchen that operates daily: enough not to have to think about it, but not so much as to let the oil age in the tin.

In the kitchen

How long it takes, and what goes on top.

Goes well with When raw, where you can taste it: on bread, on ribollita, on legumes, on boiled vegetables. On a tagliata, a drizzle at the end of cooking.
