What it is, and what is in it
Sixty bitterness units are the highest number in the catalog, and they immediately tell you what kind of beer it is. The hops are American and are added twice: during boiling, where they impart bitterness, and cold in dry hopping, where they only provide aroma.
It's the second addition that defines its character. The nose is fruity and citrusy, with a hint of passion fruit; the bitterness arrives afterward, clean, and refreshing. The color is bright golden, the head white, compact, and persistent.
Six point two percent ABV, top-fermented, unfiltered and unpasteurized, with refermentation in the bottle.

The label’s terms, explained
What an IPA is
India Pale Ale. The name comes from the pale ales the English shipped to India in the nineteenth century: more heavily hopped and stronger than the others, because hops and alcohol preserve. Today it no longer preserves anything, and IPA has become the name of a family of beers in which the hop — in bitterness and in aroma — comes before everything else.
What «American» means
It indicates the school, not where the beer comes from. American IPAs were born in California in the 1980s and are distinguished from the English ones by the hops: the varieties grown in the north-west of the United States give citrus, resin and tropical fruit instead of the grassy, earthy notes of the European ones. From there come the citrus nose and the clean bitterness this family carries with it.
Dry hopping
Cold hopping. Hops added in the boil give bitterness but lose the aromatic oils, which evaporate with the heat. By adding more after fermentation, with the beer cold, you take only the aroma: the oils stay, the bitterness does not increase. It is the technique that explains why certain IPAs have an enormous nose and in the mouth are less aggressive than the aroma would suggest.
What IBUs are
International Bitterness Units: the laboratory measurement of the bittering substances the hop has given up to the beer. An industrial pale lager sits around 10-20, a pale ale between 30 and 45, a modern IPA often passes 60. It is not a scale of taste: it measures what is in the liquid, not what is felt, and the malt can mask part of it.
