What it is
Decaffeination occurs on green coffee, before the bean arrives at the roasting plant: here, decaffeinated coffee passes through the same roaster as other blends, and the only thing that changes is the skill of the roaster, because the decaffeinated bean darkens more quickly.
In whole beans, in the half-kilo format: the whole bean exposes much less surface area to the air than ground coffee.

- How it is roasted
- Traditional oak wood roasting: wood is added to the roaster's stove and the heat rises from one hundred to two hundred and ten degrees within twenty minutes, in a gradual increase.
