In short

Heather blooms in acidic and poor soils, where little else can survive, and it has a long flowering period. The resulting honey is amber with orange hues and has a warm, almost caramel note, with a slightly bitter aftertaste.

It is the honey that crystallizes the fastest of all: in the jar, it is opaque and compact, more for spreading than pouring, and that is its normal state — it is not altered and does not need to be melted down every time. If you need it fluid, a bain-marie below forty degrees and nothing more. Store in the pantry, away from light and heat. Half-kilo glass jar, hand-filled in Montevarchi.

In the kitchen

How long it takes, and what goes on top.

Goes well with Toasted bread, fresh goat cheeses. On a slice of almond cake.

The farm

La Foresta

A farm in Montevarchi, in the Valdarno: since 2021 it has been bringing back almost four hundred centuries-old olive trees left abandoned for years, grown without chemical treatments and converting to certified organic. The olives are picked by hand and cold pressed within a few hours. Beside the groves an apiary of more than fifty hives, stationary beekeeping: hive care, harvesting, extraction, jarring and packing are all done on the farm, by hand.
