In short
Black locust blooms between late April and early May, and the blooming period lasts barely ten days: all the acacia honey of a given year is contained within that window. It's the lightest honey that comes out of these hives — straw-yellow, almost transparent when held against the light — and on the palate, it's sweet and clean, without the lingering aftertaste left by darker honeys.
It's also the only one that remains liquid after several months: in acacia honey, fructose predominates over glucose, and as long as that ratio holds, crystals do not form. It should be stored in a pantry, away from light and heat; refrigeration is not necessary. Half-kilogram glass jar, hand-filled in Montevarchi.

La Foresta
A farm in Montevarchi, in the Valdarno: since 2021 it has been bringing back almost four hundred centuries-old olive trees left abandoned for years, grown without chemical treatments and converting to certified organic. The olives are picked by hand and cold pressed within a few hours. Beside the groves an apiary of more than fifty hives, stationary beekeeping: hive care, harvesting, extraction, jarring and packing are all done on the farm, by hand.
