What it is
Decaffeination takes place on green coffee, before the bean arrives at the roastery: here, decaffeinated coffee passes through the same roasting machine as other blends, and the only thing that changes is the hand of the roaster, because the decaffeinated bean darkens more quickly.

- Traditional oak wood roasting: wood is added to the roaster's stove and the heat rises from one hundred to two hundred and ten degrees within twenty minutes, in a gradual increase.
