Where it comes from
It's the house grappa that has waited: aged in wood, and its color tells you that even before the glass does. Where the Bianca leaves the grape bare, the Riserva adds what the wood gives it over time.
This one also comes from the winery's pomace, that is, from what remains of the manual harvest on the hills between Crespina Lorenzana and Fauglia. It's the same idea that underpins the rest of the estate: what's there is used.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
