Where it comes from
Brandy is a distillate of wine, not pomace: that's the other path one can take after the grape harvest, and the difference with grappa lies entirely in what is put into the still.
On a farm where wine is central, distilling a portion of it is a choice of range rather than necessity. The grapes come from the hills between Crespina Lorenzana and Fauglia, harvested by hand.

Who makes it, and where
Fattoria Uccelliera, in Crespina Lorenzana.
Made on the Pisan hills.
Two hundred and forty hectares between Crespina Lorenzana and Fauglia, twenty-one of them vineyard and olive grove.
“Uccelliera” is a medieval place name: it marked the hill where an old bird-catching stand once stood, a set-up for taking migrating birds. Today that same piece of hill does the opposite, and the arable land is farmed with the wildlife that passes through in mind.
