Honey is the main product of the house: harvested in limited quantities, following the blooms of the Valdarno hills, handcrafted, and sold directly. Each vintage has its own character—this is the difference between artisanal honey and off-the-shelf honey, and it's why at the market stall, it's best to ask, "what's available this time around?"

Extra virgin olive oil is the product that started it all: oil from reclaimed olive groves, in quantities that depend on the vintage and the patience of the revived trees. It is honey's older sibling—less in the spotlight, but without it, the scene wouldn't exist.

Alongside, the ideas lab: ointments combining olive oil and beeswax, herbal teas with olive leaves. These are ongoing experiments, not catalog promises: they only make it to the stall once they've convinced their creators.

The Foresta catalog isn't written by a sales office: it's written by the vintage. What the season delivers arrives in the piazza on Wednesday—and when it's gone, it's gone.
